		<description>I like to make zucchini with ground meat or turkey, diced onions, diced bell pepper, and fresh tomatoes.  Just slice the zucchini and combine in a pan all the ingredients above, cover, season as desired, and cook on low to medium-low.  Serve it over rice.  This is a very healthy meal and my family loves it!</description>

		<description>The question is what can&#039;t you make with zucchini! You can grate this moist vegetable into muffins or any bread recipe if you want to hide it from the kids. But I really love the taste of zucchini so much that I prefer it in casseroles.  One of my favorites is this Zucchini and Fish Casserole: 
1.Cut up a nice big onion into chunks
2.Cut up a green pepper into chunks
3.Cut a couple small or one large zucchini in chunks (don&#039;t peel it!)
4.Layer the onion, green pepper and zucchini and casserole dish.
5.Pour about 1/2 can diced tomatoes (use one with extra spices if desired) over vegetables.  Grate a clove of garlic over tomatoes. 
6.Lay about 1 pound of any good solid fish over the tomatoes and pour the rest of the tomatoes over the top.  
7.If you want, you can add a little shredded cheese on top or a bread crumb/butter mix for a little crust.  Or add both!  It&#039;s all good!</description>
