What Can I Make With Watercress
My five year old has been very interested in plants and how they grow lately so we started a little planting experiment. We planted some watercress since it’s easy and fast to grow. In fact, its’ too easy and I have a huge amount of these yummy little plants sitting in a pot on my kitchen counter.
I like to sprinkle some fresh watercress on my salad, but other than that I honestly don’t know what to do with these. Any ideas or recipes that call for watercress? Please post them as a comment below.

Here’s my favorite watercress soup recipe.
Watercress Soup
1 bunch watercress
4 tbsp. butter
1 onion, finely chopped
2 garlic cloves, finely chopped
Natures Seasoning to taste
1 tsp. dill
1 tbsp. chopped parsley
3/4 - 1 c. instant mashed potatoes
1 1/4 c. chicken broth
1 1/4 c. half and half
Blanch watercress for 3 minutes. Drain and puree. Saute onion and garlic in butter until soft. Add watercress puree and saute gently 2-3 minutes. Add chicken broth, dill, parsley, Natures Seasoning. Simmer 3-4 minutes. Add instant mashed potatoes and heat to boiling. Serve in heated bowls.

I like to add it to sub style sandwiches. It’s really good on a simple whole wheat sub with fresh tomatoes and a mild cheese like young gouda or havarti. Just drizzle a little olive oil and vinegar over it and you have yourself a gourmet sub that’s full of vitamins and antioxidants.

My aunt used to make a cold soup with watercress. I’m not sure what else was in it but it had a nice mild flavor and was wonderful in the middle of summer. Does anyone have a recipe?

I never think to buy this because I never knew what to make with it. I think the soup that Dawn shared looks great. Thanks for this site, it has really opened up my eyes to new foods!
