What Can I Make with THIN MINTS? (Girl Scout Cookie Time)
I have heard in the past that thin mints make some awesome desserts.
I’ve mashed them and sprinkled them on top of ice cream (as if they aren’t fattening enough already).
I also love dipping them into my coffee.
I’m sure some creative moms out there have great ideas for recipes using Thin Mints. Let’s hear it –

Use them as frosting. Once you have cooked a cake. Let it cool, then place the thin mints on top of the cake. Put it in the oven for about 10 mins until the cookies melt. Then place it in the freezer. The chocolate should harden back up. Then cut it. You will have Thin mint frosting with your favorite cake.

I’ve used Thin Mints as a cookie base for an ice cream cake.
To make your own ice cream cake, soften a half gallon of ice cream (but not too much, you don’t want it to be soupy) and pour into a glass baking dish or bread pan lined with a sturdy plastic wrap.
Make sure the plastic wrap comes out of the pan on all sides so you have enough wrap to fold over the top of your cake while it’s in the freezer.
In a ziplock bag, crush the thin mint cookies using a rolling pin or a meat tenderizer until they are a coarse crumb.
Lightly spray the plastic wrap-lined baking dish with a little vegetable spray and spread the cookies over the plastic to make a layer without any holes or spaces.
Over the top of the cookies, pour chocolate sauce from a squeeze bottle over the cookie layer so that the entire layer of cookies crumbs is covered. Once frozen, this will help keep your crust together.
At this point, freezing the cookie and chocolate sauce layer is a good idea. It will make the next step easier. Place the baking dish in the freezer for twenty minutes.
Take the frozen cookie crumb layer out of the freezer and spread softened ice cream over it until it is thick and even. At this point you can also put additional chocolate sauce or cookie crumbs in to make a new layer, or make this your top.
Fold the plastic wrap over the ice cream and freeze for one hour. To frost and decorate the cake, choose either a whipped topping frosting or simply decorate the top of the ice cream.
To serve, either pull the cake out of the dish by the plastic wrap handles (only if the cake is HARD frozen for more than three hours) or simply slice and serve from the dish.

For Halloween, take your thin mint and use it as the bottom of a witch’s hat. Take a sugar ice cream cone, dip the bottom in chocolate and decorate it with sanding sugars, non-pareils or accents and place it on the thin mint. You have a cute, easy witch’s hat to show off for your party.

I actually used Thin Mints as both a topper and decoration for what I will call a Double Chocolate Thin Mint Cake that I made for a co-workers birthday. I just made a double layer box brand chocolate cake and let it cool. I then iced between the layers with whipped chocolate icing, crumbled Thin Mints, and a mint icing (mixture of Cool Whip, Cheesecake flavored instant pudding mix, milk, mint extract, and green food coloring). I iced the rest of the cake with more of the whipped chocolate icing and covered the top with crushed thin mints. I decorated the top edge and the base of the cake with alternating dollops of the whipped chocolate icing and the mint icing. To finish the cake, I dolloped small dots of the mint icing in a circle on top of the crushed thin mint cake top to anchor halfed thin mint cookies.

I LOVE thin mints. They are by far the best girl scout cookie created. A fun thing to do with them is crush them into a basic brownie mix. You would be surprised at how gooey and amazing this makes your brownies. Your normal basic brownie turns into a deliciously moist mint chocolate brownie. You could layer down brownie batter, then layer crushed thin mints, then the rest of the batter on top. The thin mints will melt into the brownie and will taste absoluetly heavenly!

If you would like to defer from chocolate with the thin mints, you could make a Tiramisu that accents the minty flavor rather than the chocolatey flavor. you could start off with a bottom layer of thin mints, then a layer of whipped topping ( you could even add in some mint extract to the whipped topping if you wanted it that much more flavorful)Then on top of the layer of whipped topping you could do a layer of freshly cut strawberries. The sharp sweetness of the strawberries would really compliment the mint and chocolate well! Then start over! Thin mints, whipped topping, strawberries etc. For a fancy finish you could garnish the top with a sprig of mint! and voolah!

Chocolate Thin Mint Pizza Supreme
Ingredients:
1 pkg. (18 oz.) refrigerated chocolate chunk cookie dough
1/2 pkg. (19 cookies) Girl Scout Thin Mints
1/2 cup white chocolate morsels
Vanilla ice cream, optional
Directions:
Press cookie dough evenly in the bottom of an ungreased 12-inch pizza pan or a 13×9x2-inch baking pan. (Dough will barely cover the pan.) Break Thin Mints into halves or thirds; press cookie pieces into dough, covering evenly. Bake at 350 degrees for 12 to 18 minutes or until golden brown. Place white chocolate morsels into a small self-closing bag. Microwave the bag of morsels on MEDIUM HIGH (70% power) for 40 to 50 seconds or until melted. Snip one corner (about 1/8 inch) off the bottom of the bag. Hold bag tightly at top and drizzle white chocolate stripes over top of pizza. When cool, cut pizza into 8 or 10 wedges. If desired, top each serving with a scoop of ice cream.
