What Can I Make With Sweet Potatoes
Since we’re getting close to Thanksgiving, I’m seeing sweet potatoes on sale everywhere. Like I do with my turkeys, I’d like to stock up and take advantage of the super low prices. But once I get all these bags of sweet potatoes home, what do I do with them or how do I store them?
We like to eat baked sweet potatoes with a little butter and sugar throughout the year … it’s a sidedish and dessert all in one. Other than that, I only use them for sweet potato pies that I usually bake just for Thanksgiving.
Any other ideas and / or good recipes?

Hi,
My name is Magriet and I’m a South African. We love our sweet potatoes and we also mostly eat it sweet. It can be prepared in many different ways. here are some examples:
To get away completely from the “sweet” you can make “normal” mashed potatoes from it by mashing it with butter and hot milk. It is also very tasty added to any casserole instead of the potatoes. In fact for a very tasty variation of any recipe using potatoes, the potatoes can be substituted with sweet potatoes.
Here follows a recipe for sweet potatoes baked with fruit:
Ingredients:
6 Small sweet potatoes
1/3 cup hot milk
1 Teaspoon salt
4 Tablespoons butter
4 Tablespoons sugar
1 medium pineapple
4 Ripe bananas
Method:
Boil the sweet potatoes in there skin until they are tender.
Peel the sweet potatoes and mash them.
Add half the butter, the hot milk, salt and half the sugar.
beat this mixture until light and creamy.
Grease a 8 cup, shallow ovenproof dish.
Spread half the sweet potatoes in the dish.
Peel and cube the pinapple.
Sprinkle over the sweet potatoes in the dish.
Dot with half of the remaining of the butter.
Sprinkle over half of the remaining sugar.
Peel and slice the bananas.
Place them on top of the pineapple layer.
Cover with the remaining sweet potatoes.
Dot with the remaining butter.
Sprinkle with the remaining sugar.
Bake at 350 degrees Fahrenheit for 45 minutes.
This is a very tasty vegetable dish to serve with your Thanksgiving turkey instead of pumpkin pie!
Enjoy,
Magriet
