bread soup, of which there are many venerable varieties. The simplest is probably Spain Sopa de Ajo, or garlic soup. Tear your bread up and put, along with several cloves of garlic, into a stockpot with some good chicken stock. Boil and whisk until smooth. Shower with parsley. You can do the same thing with best quality canned tomatoes and make a fine tomato soup. Bread is basically a wonderful thickener for all kinds of soup.

Then there&#039;s strata. Cube your stale bread and put it in a lasagna pan along with any vegetables you like: broccoli, onions, cauliflower florets, green beans, mushrooms are all great. Beat together six to eight eggs and a few cups of milk. Pour over the stale bread. Cover and refrigerate overnight. The next morning, top with your favorite shredded cheese and bake until bubbly and browned in spots. This is a fantastic feed-a-crowd meal.</description>
