    Here’s one of my favorite crockpot recipes:

    CROCKPOT SOUR CREAM SALSA CHICKEN

    4 skinless boneless chicken breast halves (3 oz each)
    1 package reduced-sodium taco seasoning mix (My Mom uses 1/2)
    1 cup salsa
    2 tablespoons cornstarch (Not necessary)
    1/4 cup light sour cream

    Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours. When ready to serve, remove the chicken from the pot. Place about 2 T cornstarch in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream.

    my kids love this soup:

    Throw together some chicken broth, leftover cut up chicken (any kind), leftover rice or pasta, frozen corn and then add to that about a cup of SALSA (we like the corn and black bean type best for this). Season with salt, pepper and chili powder to taste. It’s yummy and a great way to get rid of leftovers in the fridge!

    For a quick summer salad mix a can of black beans (rinsed), a can of corn, a cup of salsa, a spash each of olive oil and vinegar, salt, pepper and cumin.

    Put the salad in the fridge for at least an hour so all the ingredients will be well chilled.

    This salad is great for a summer picnic, since it doesn’t have any mayonaise etc, that could spoil quickly.

    Salsa is great on baked potatoes, too.

    Just poke a few holes into a potato, put it in the microwave for a few minutes, turn, and microwave a few more.

    Top with Salsa & Sour Cream (or cream cheese).

    Tortilla soup. Mix chicken broth, chicken, onion, spices, then add a little salsa and broken tortilla chips. Top with avocado and sour cream.

    Cut up boneless skinless chicken breasts to bite size pieces, mix with salsa and fat free refried beans and some cheddar cheeses, throw in a baking pan and bake it for 45 minutes or so.

    If you get low or non fat cheese it’s a healthy dish, too!

    A very simple nacho dip: Cook a pound of hot Italian sausage in a skillet and drain. Melt in 3 pounds of diced Velveeta and a large jar of salsa, all ingredients to taste. I keep mine in a slow cooker to melt and stay warm. This dip is a huge hit at parties when served with tortilla chips! Also keeps well in the refrigerator and can be microwaved for individual snacking.

    Clean and dry any kind of chicken place on baking sheet and pour salsa on top bake until chicken is done.

    I like to add it to either a meatloaf or hambureger patties to give them a zing.

    Easy Mexican Enchiladas
    1 (8 ounce) package cream cheese (softened)
    2 cups shredded cheddar cheese
    1/4 cup green onions (thinly sliced)
    6 flour tortillas
    1 (16 ounce) jar salsa of choice

    Place cream cheese in bowl and beat with electric mixer until smooth. Add 1 cup of the cheddar cheese and onions. Mix well. Spread each tortilla with a portion of the cream cheese mixture down center of tortilla. Roll up and place, seam side down, in a baking dish. Repeat with remaining tortillas until cream cheese mixture and tortillas are used up. Pour salsa over tortillas. Sprinkle remaining 1 cup of cheddar cheese over salsa and tortillas. Bake at 350F for approximately 20 minutes or until everything is heated through and cheese is melted and bubbly.

    * Serve with your favorite Mexican toppings and a side salad.

    Salsa is great to add to your scrambled eggs for a zesty flavor! You can turn an ordinary salad into a taco salad by adding salsa and sour cream to your lettuce, cheese, and tomato salad. You can also add salsa to any chilli, for extra flavor.
