What Can I Make With SAFFRON?
I have splurged once and bought some saffron. It was like $13 for a few little threads. What was I thinking? Now I have this stuff and don’t know what to do with it.
It looks just like yellow threads and I know it came from the center of some exotic flower. But, what the heck can I make with SAFFRON?

Here’s an Easy Saffron Rice recipe you might like.
1 1/2 tablespoons olive oil
1/4 cup onions, diced
1/2 teaspoon minced garlic
1 cup white rice
1 1/2 cups chicken broth
1/2 teaspoon saffron
1 1/2 teaspoons parsley, chopped
Heat the olive oil in a saucepan.
Add onion and garlic and cook until just soft.
Add the rice and cook for 3 minutes, stirring frequently to absorb flavor.
Add the broth, saffron, and parsley.
Cover and reduce the heat to low.
Cook for 15-18 minutes or until the liquid is absorbed and the rice is cooked.

Here’s another recipe with saffron in it. It uses powdered saffron rather than saffron threads, though.
It looks wonderful —
Arroz con Pollo
1/2 cup Olive oil
1/4 cup Tomato sauce
1 Frying chicken cut up
1/8 teaspoon Saffron (powdered)
1 Small onion chopped
2 1/2 cups Chicken broth
1 each Clove garlic minced
1 cup Uncooked rice
Salt and pepper to taste
Heat oil and brown the chicken.
Add the onion and garlic and cook a few minutes.
Add tomato sauce.
Add saffron dissolved in chicken broth.
Cover and cook for 20 minutes.
Add rice, stir well.
Cover again and simmer for 30 minutes longer, or until all liquid has been absorbed.
