What Can I Make With Red Cabbage?

One of my favorite winter vegetables is red cabbage. I stew it with some grated apples and a touch of vinegar until it’s nice and soft. It’s really good with a pork roast and some potatoes. I just got back from the store with a nice head of this purple looking cabbage and was wondering if anyone had any other ideas on what to make with it.

    I like to sprinkle some shredded raw red cabbage on mixed salad greens. Gives the salad some color and extra crunch.

    RED CABBAGE SALAD

    1/2 red cabbage, thinly sliced
    1 red onion, thinly sliced
    2 tbsp olive oil
    2-3 tbsp light red wine vinegar
    1 tsp salt
    1 tsp pepper

    Slice red cabbage and onion into thin pieces and place in a large salad bowl. Add olive oil, red wine vinegar, salt, and pepper to taste mixing all ingredients together. Serve right away and enjoy.

    I read somewhere you can fry cabbage. I just forgot the recipe.

    I put it in the crockpot with a beef roast and some carrots. I set it on low and let is cook all day. I also add to beef broth to make sure the meat doesn’t dry out.

    Mexi-Cabbage (sounds weird, but it is truly yummy and very healthy)

    1 tbsp oil
    1 small head of red cabbage, chopped
    1 tsp garlic salt
    2 tsp chili powder
    salt and pepper
    1 cup salsa
    1 15oz can black beans
    1/2 cup shredded cheddar cheese

    Heat the oil in a large skillet. Add the cabbage and saute until slightly wilted (about 5-10 minutes). Add the spices and salsa. Cook, stirring, 5 minutes more. Add the beans and cook until the beans are warmed through. Serve with cheese on top.
