What Can I Make With Pinto Beans?
One of my favorite comfort foods is pinto beans and corn bread. In fact, I have a pot of beans cooking right now. The problem is I can’t seem to judge how many dry beans we actually end up eating. I keep forgetting how much they swell up in the cooking process. The result? We end up with way to many cooked pinto beans.
Any ideas on what I can make with them? My family loves beans and cornbread, but isn’t big on eating the leftovers and I end up tossing them. What a shame!

I use leftover beans (any kind really, not just pintos) to make refried beans. Just mash them really well with a bit of the bean juice and pan-fry.
You can then use that anywhere you’d use canned refried beans otherwise. It also freezes well if you’re not ready to use them right away.

I use leftover beans in soups or make a batch of chili with them. Just brown some ground beef, season it with salt, pepper and chili powder then add your beans and a can of diced tomatoes. Let everything simmer together and you have a nice pot of homemade chili.
