What Can I Make With Pie Crust?

Since today is National Pie day, I thought I’d pose this question – What Can I Make With Pie Crust?

Obviously there are all kinds of different pies from sweet to savory that you can make with this tender, flaky crust. Speaking of Pie Crust, here’s my favorite recipe for it. – Easy Pie Crust Recipe -  I didn’t have much success in making my own pie crusts until I tried this particular recipe and it turns out great every single time.

    I’m not much of a pie person, but I love savory meat pies. Here’s one of our favorites:

    Chile Relenos Pie

    1 lb. ground beef
    1 can diced tomatoes
    About 8 oz of shredded cheddar cheese.
    3 cans whole chili peppers
    2 deep dish pie crusts

    Brown beef; drain well. Mix in diced tomatoes; drain again. Layer in 1 pie shell, 1/2 of meat, then 1/2 of shredded cheese. Take well drained and split whole green chilies and layer over cheese. Layer rest of meat, cheese and chilies. Cover with 2nd pie crust. Seal edges of crust together with a fork and puncture top crust with fork. Bake at 350 degrees for approximately 30 minutes or until golden brown.

    I use basic pie crusts to make chicken pot pies. I use Megan’s Pantry Potato Soup as my base and add cooked diced chicken and any veggies I have handy. It’s actually pretty good. You could use something else as the base, but I haven’t figured out anything better yet.

    A lot of Old World style casseroles have a pastry top. If you put together your favorite chicken, turkey, beef or vegetable casseroles and divide it into two nice deep dish pie pans, you can drape a pie crust over each pan, trim the edges so they just barely fall over the pan a little, brush them with a touch of butter and poke a few holes in the top. I think this really dresses up an ordinary casserole. Keep in mind that you may need to cook your casserole until it’s almost done before you put the pie crust on top so the crust doesn’t burn. It will take only a few minutes to cook and brown up nicely. You’ll also want to put your pie pans on a cookie sheet in the oven to capture the juices that will spill over under the crust. I think that part makes the pies especially ‘Homey’ looking… and tasting!
