What Can I Make With Pepper Jack Cheese
There are few things better than a tray of Pepper Jack cheese, some hearty crackers, and a cold glass of beer. You’re probably thinking, “What more could you want”? Here’s my dilemma, if you want to call it that.
My husband had an event at his work place and there was a lot of left-over food, including some blocks of cheese that hadn’t even been opened. We both love Pepper Jack cheese, so as they were dividing up the food to send home with everyone, he offered to take the Pepper Jack off their hands. Good for him! So, now we have a big hunk of Pepper Jack cheese in our refrigerator.
Pepper Jack cheese is really just Monteray Jack cheese with a kick. It has a very unique flavor. How can I describe it… it’s HOT! When you snack on it you have to be prepared. So, I can’t imagine what you could cook with Pepper Jack cheese that could stand up to the flavor of the cheese. I’m guessing Mexican food would be the best bet, maybe a quesidilla.
Does anyone have an idea where I could best use my stash of Pepper Jack cheese? A six pack of beer later, and my husband and I are still looking at a huge hunk of cheese. Help!

Yes I also agree with Marlborogirl. You can make Spicy PepperJack Chicken Sandwich Platter or Chicken Wings Platter with Pepper Jack Cheese. Here is a recipe of Turkey Chipotle Chili with Pepper Jack Cheese Corn Cake Toppers.
Ingredients
* 2 tablespoons extra-virgin olive oil, corn oil or vegetable oil
* 2 pounds ground turkey breast
* 1 medium onion, chopped
* 3 cloves garlic, chopped
* 1 rounded tablespoon chili powder, a palm full
* 2 chipotles in adobo, chopped, found on Spanish/Mexican foods aisle or, 1/2 cup hot chipotle salsa may be substituted
* Salt
* 1 cup Mexican beer
* 2 cups chicken stock
* 1 (28-ounce) can chopped stewed tomatoes
* 1 can red kidney beans, drained
* 1 (8 1/2-ounce) package corn muffin mix (recommended: Jiffy Mix) prepared to directions on box for corn cakes
* 1 1/2 cups shredded pepper jack cheese, 8 ounces
* 2 tablespoons butter
Directions
Heat deep skillet or wide pot over medium high heat. Add oil and turkey. Crumble meat as it cooks, 3 minutes. Add the onions and garlic, chili powder, and chipotle. Cook another 5 minutes. Season with salt. Add beer and cook another minute, stirring to loosen any bits from the bottom of the pan. Add the stock, tomatoes, and beans and bring to a bubble. Reduce heat and simmer 10 minutes.
Heat a nonstick griddle pan over medium high heat. Mix batter and cheese together. Rub grill with butter, nesting the butter in a paper towel to hold on to it. Ladle the batter to make 3-inch cheese and corn cakes. Cook 3 minutes on each side, until golden. Transfer them to a plate and cover with foil to keep warm.
Serve bowls of chili with cheese-corn toppers — like a spicy, corn topped chili pot pie.

I like making mini salmon sandwiches:
English muffin
Slice of the cheese
Horizontal (round) slice of tomato
Smoked salmon
Toast the muffin(s) as you slice the tomato.
As soon as it’s out, put the cheese on the bottom muffin bun, put the tomato on top of it, and the salmon on top of that, and close with the top muffin.

I use pepper jack cheese for tons of stuff, I love it on burgers!
but my two favorite things are on a bowl of curry black beans & brown rice(if you’re not a curry fan, it’s great without it too) or on my curry chicken:
take a package of chicken tenders and marinate in the following:
1 small container of plain yogurt
grated ginger
2 T yellow curry powder
minced garlic
I skewer them and grill. the yogurt makes them stick to the grill or pan(if you oven broil) so I always put them on foil and oil it first.
the curry chicken & pepper jack go great together and you can make soft tacos or quesadillas too.

I like to take:
2 handfuls of tortilla chips
1 cup of pepperjack cheese
1/2 cup of sliced olives
1/2 cup of refried beans (moistened to make spreadable)
1/2 cup of cilantro
salt and pepper to taste
Layer in order, and bake at about 400 for 5 minutes until cheese is melted.
