What Can I Make with OVERRIPE BANANAS?
Oops, I did it again. lol. I bought bananas and let them get a little bit overripe.
They are sitting on the counter and I sure don’t want to throw them away. They cost money! But, I don’t want to eat them plain. bleck.
So, help please, creative moms. I need your recipes or ideas.

I had some overripe bananas on my counter this morning and came up with the yummiest breakfast treat.
You’ll need :
2-3 ripe bananas
can of refr. biscuits
butter
brown sugar
cinnamon
Put the biscuts in a round 9-inch cake pan.
Mash the bananas and add cinnamon and brown sugar to taste. Spread a little butter on the unbaked biscuts then top with the banana mixture.
Bake at 400 F for 10-12 minute, then broil for a few minutes to get the banana sugar mixture hot and bubbly.
Let it cool for a few minutes before serving.

There are two different things that I do with my over-ripe bananas. I eather make banana bread or I put them into a smoothy. Also, if you are not ready to use them right away you can freeze them and use them at a later time.

You can make Bananas Foster with them. Just melt 2 tblsps of butter in a non-stick pan, sprinkle with brown sugar to taste, slice the bananas into the pan and heat thru. Serve on top of ice cream, pound cake, etc. Note: Rum can also be added, if desired.

You can also slice them thinly and put them on top of pancakes. As in, when you pour the batter on the griddle for the pancake, put several slices on top. When the bottom is done, flip. they’re delicious!

Try making either banana bread or if you want to indulge just a bit. Make yourself a banana milkshake. All it takes is a cup or so of cold milk, the bananas, a bit of sugar to sweeten it up some and if you are like me and like ice cream, plop in a scoop of vanilla ice cream. YUMMY! and my kids like it too.

I like to mash the ripe bananas on a piece of toast topped with peanut butter. My kids love it. They also like to use graham crackers as the base instead of bread. Add some marshmallows on top to make it fun for the kids.

Since it’s summer you should take advantage of the weather and cook those bananas over a campfire. They can be put on the grill skin and all or you can cut them lengthwise but not fully through and stuff them with chocolate chips and marshmallows. Wrap them in foil and leave them in the fire until the center is melted and it makes a great easy dessert that kids love. Careful, they’re very hot when they come out but you can experiment with fun variations like caramel, peanut butter, or jam fillings.

When there are overripe bananas on my counter i usually serve them this way. I melt approximately 1/4 cup peanut butter in microwave (creamy or crunchy)add 2 tbs. of honey and mix together. I slice bananas on the bias for appearance and place on a plate then drizzle peanut butter mixture over them then drizzle a little chocolate syrup on top of that and sprinkle with either granola or chopped nuts or both. This is very good and good for you and even the kids love them.

Banana Picnic Cake
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter (softened)
1 cup sugar
2 eggs
2 ripe bananas mashed
2/3 cups plain yogurt
1/2 cup chopped walnuts (optional)
In a bowl combine flour, baking powder and baking soda. In a separate bowl mix butter and sugar until well combined. Add eggs and mashed bananas to butter mixture. Add to flour mixture along with the yogurt and mix together well (until smooth). Spoon batter into lightly greased baking pan and top with walnuts (if using). Bake at 350 degrees for about 35 minutes or until baked through.

I just throw them in a blender with 1% milk, maybe a few strawberries, and the result is quite a shake!

I use overripe bananas to make these quick banana muffins. Everyone in my family loves them for breakfast.

When i have bananas I mash one up. Then i put the mashed bananas on gram crackers. I then melt marshmellows and put them on top!

You can also slice or mash them up and then freeze them if you don’t want to use them right away.
