What Can I Make With Mashed Potatoes?
I’ve always liked mashed potatoes with turkey and gravy for Thanksgiving. Since my mother-in-law, whose house we usually go to for our big Thanksgiving meal makes both potato salad and scalloped potatoes instead, I haven’t had them in a while and thought it would be nice to bring them along as a side dish. So I made a big pot of homemade mashed potatoes this year. Guess what… when I got there, my mother-in-law had the same idea. It got really funny when my sister-in-law showed up with a big pot of steaming mashed potatoes as well.
Obviously there are only so many servings of mashed potatoes a person can eat in one meal and I am now stuck with a big tub of them in my fridge and we are all tired of eating them and have run out of the gravy to go on top.
So, what can I make with prepared mashed potatoes?

How about making some Shepherds Pie?
You just brown some ground beef then add some cooked veggies in with it (we like corn). Pour the meat and veggie mixture in a casserole dish and top it with the mashed potatoes and bake until the mashed potatoes are warm and browned slightly on the top. Very yummy and you can toss just about any leftover veggies in there with it. Come to think of it, you could probably even chop up some of that leftover turkey in with it.

How about Mashed Potato Pancakes?
2 cups mashed potatoes
1 egg
6 tablespoons all-purpose flour
Salt and pepper
Vegetable oil
Combine potatoes, egg and flour in bowl. Mix thoroughly. Salt and pepper to taste.
In a large heavy skillet, heat small amount of oil(just enough to cover bottom of skillet) over moderately high heat until it is hot but not smoking. Fry heaping tablespoons of the potato mixture, flattening them slightly with the back of the spoon, for 1 minute on each side, or until they are golden brown. Place cooked pancakes on paper towels to drain the oil. Serve warm with butter or your favorite gravy.

WOW! We didn’t have mashed potatoes with Thanksgiving dinner this year! I didn’t really miss them… until now. I want the leftovers so I can try out the shepherds pie. The last time I had that was in my high school cafeteria. I think I can do better than that though.
My father has tried and tried to recreate his grandmother’s Fried Mashed potatoes. I think this Potato pancake recipe will do the trick. He has been leaving out the flour and egg and just adding milk.
So, let see mashed potatoes tonight, Potatoe Pancakes for breakfast tomorrow and shephards pie for dinner.

Cupcake Meatloaf
Makes 6 servings
1 pound ground beef
1 medium green bell pepper pureed (this is added for moisture)
1/4 cup ketchup
2 tablespoons dijon style mustard
2 tablespoons worcestershire sauce
1 cup bread crumbs
2 eggs
2 cups instant mashed potatoes prepared
1 cup cheddar cheese shredded
1. Mix the 1st 7 ingredients together.
2. Spray the inside of a muffin tin with non-stick spray and fill each cup to the top *they will shrink a bit during baking*.
3. Bake for approximately 30 minutes at 350 degrees. When done, drain off the grease.
4. Prepare Instant Mashed Potatoes and place them on the top of each meatloaf like icing and add shredded cheese like sprinkles.
5. Place muffin tin back in the oven for approx. 5 minutes to warm the potatoes and melt the cheese.

Hi Betty, we tried the shepherd’s pie and it was a big hit at my house.
Carol and Christine… both of those ideas / recipes sound fabulous. I think I’m going to have to make another batch of mashed potatoes.

Okay.. I haven’t tried this one.. but I’m thinking maybe biscuit crumbs are like bread crumbs? I think it was on a website from Europe somewhere… They had icing sugar for the powdered sugar. I figured that one out, but not sure about the biscuit crumbs.
Mashed potato play dough
1 cup cooked mashed potato
2 cups powdered sugar
1 cup fine biscuit crumbs
Mix the mashed potato and icing sugar until they make a thick, creamy paste. Stir in the biscuit crumbs and knead again.
Tip: Mix some cocoa powder with the dough to make brown dough. It will also give a chocolate taste to the mashed potato dough.
