What Can I Make With Lemons

I needed some fresh lemon for a recipe the other day. I ended up buying a pretty big bag of these citrus fruits, figuring that I would use them for “something”. Of course now that I have them sitting on my counter, I have no idea what to do with them. We could make homemade lemonade, but I’m sure there are all kinds of other yummy recipes that use lemons. Please take a moment to share some of your favorite lemon recipes as a comment below.

One thing I like to do is just slice up the lemon, then wrap some fish, the lemon slices and a bit of fresh dill in foil and grill everything. Turns out great every single time.

    Whenever I use a lemon, I always zest it before slicing it. The zest freezes beautifully and I always have it on hand for baking, adding to greek recipes, etc. You could juice all of the lemons and freeze the juice as this also freezes beautifully. Alternatively, you can slice the zested lemons into wedges and freeze them. then you always have a slice to put into iced tea or water with the added bonus of it helping to keep your drink cool.

    You could also make a lemon curd with butter, egg yolks, sugar and lemon juice. Then use either a store bought graham cracker crust, your favorite tart dough recipe or the vanilla wafer crust I suggested on the wafer post to make a fruit tart. Fill the crust with lemon curd then top with whatever sliced fruit you want, arranging it attractively. Good to serve to company, they will be very impressed.
