What Can I Make with Leftover Turkey?
I found this great list that gives several ideas about what you can possibly do after the Thanksgiving, Christmas holidays or any time you decide to make a big ole turkey and have leftovers. Thanks to my friend at www.HealthyMenuMailer.com for permitting us to publish it.

Sandwiches
This is our family favorite. Simply slather mayonnaise on your favorite bread and add turkey. Enjoy! Of course, you can make this sandwich fancier by using toasted garlic bread, or adding some seasonings to the mayonnaise. You can quickly whip up some gourmet style mayo by adding some of the packet ranch dressing mix to it.
Instead of regular old sliced bread, make turkey sandwiches with fresh or chiabata bread for a different taste.
Turkey and Rice Soup
Use the leftover bones from the turkey and throw them in a large stock pot. Cover them with plenty of water and add some onion, carrot, celery and salt and pepper. Bring it to a boil and boil for about 45 min. Strain out the liquid, return it to the pot, add some rice and leftover pieces of turkey. Add any vegetables you like as well and cook until the rice and veggies are tender.
Open Faced Turkey Sandwich
Start with some really good toast. Rub a little garlic or butter on it if you’d like. Then, lay slices of turkey on it and cover with gravy. Heat up some left over stuffing and stick it in the toaster oven or your regular oven to give it a nice little crust and dinner is ready.
Turkey Wraps
Tired of turkey sandwiches? Use a tortilla instead. Pile on lettuce, raw veggies and plenty of turkey. Top with some ranch dressing and roll it up for a portable lunch or snack. Another fun idea is to mix shredded turkey with a little mayonnaise, some chopped apple, grapes and a few walnuts for a turkey Waldorf salad wrap.
Turkey Enchiladas
You can fix turkey enchiladas just like you would chicken enchiladas with your favorite sauce, tortillas and cheese. Just shred the turkey, and heat it with some enchilada sauce and cheese. Spoon the mixture on flour or corn tortillas and roll them up. Place the tortilla rolls in a greased baking dish and top with more enchilada sauce and plenty of cheese. Then bake them up until the cheese is nice and bubbly. They are a great way to use turkey in something that has a completely different flavor.
Turkey Chili
Shred your leftover turkey and cook it along with beans, tomatoes and your favorite chili seasonings. Of course you can also toss in any leftover veggies like green beans or corn and cook them right along with the rest of the chili ingredients. Serve with warm, buttery cornbread.
Turkey Salad
Make a gorgeous, colorful salad, using all the vegetables you can find in the store. Add sliced turkey to the top and add your favorite salad dressing. Or make a turkey Caesar salad with turkey, romaine lettuce, croutons, parmesan cheese and Caesar dressing.

Turkey BBQ Sandwich
Shred leftover turkey meat and mix with any leftover meat including barbeque chicken, ribs, etc. Or just mix your favorite barbeque sauce in your shredded turkey meat. Heat on top of the stove with a little butter, until cooked through. Be sure to let it cook long enough to let the flavors blend. Serve hot on a barbeque bun or english muffin. Top with a little cheese if you like.

put it in the food processor with some bottled hoisin or soy sauce, garlic, a touch of honey, and ground ginger to taste cook it in a large pot with a bag of cole slaw drain untill sticky not too wet or dry wrap pinches of mixture in quartered spring roll wrappers seal with fingertip of water or egg fry in veg. oil about 1/2 as deep as the rolls are round turning about 2 min per side and cator to your workmates you get rid of a lot of turkey quickly and you become the envy of the office when it comes to what you can do in the kitchen

We got tired of the same old “recycled” turkey dishes tonight and I came up with an idea… turkey and dumplings instead of the usual chicken and dumplings. It turned out great. I basically just replaced the chicken breast with chunks of already cooked pieces of turkey. I just cubed them up and added them to a base of celery, onion and carrots (all cooked in a bit of olive oil) and chicken stock.
I made my dumpling dough with bisquick and followed the box instructions on how to cook them.
Turned out great - everyone loved the different flavor and we got to use up the last of our leftover turkey.

Turkey Casserole
Yield: Makes 4 Servings
Ingredients:
1 can cream of chicken soup
1/2 c. milk
2 c. chopped turkey or chicken
2 c. cooked noodles
1/4 c. chopped red pepper
1 Tbs chopped parsley
2 Tbs. buttered bread crumbs
1 small can sliced mushrooms
Directions:
In 1 1/2 qt. casserole blend soup and milk. Add remaining ingredients except bread crumbs. Sprinkle bread crumbs over top. Bake at 375 for about 30 minutes.
