What Can I Make With Lasagna Noodles
I’ve had a box of lasagna noodles sitting in my pantry … I bought it on impulse and haven’t done anything with it since. We’re not really big lasagna fans around here (so don’t ask me why I bought it), so I’ve been wondering if there is anything else I can make with these. Or maybe I just need a really good lasagna recipe?
I think mostly we’re just not too fond of the ricotta cheese. I’ve tried making it with cottage cheese before and we didn’t care for it either. Can you make a lasagna without any type of white sauce?

You can make pesto lasagna, if you like pesto. Get some store bought pesto or make your own with fresh basil, olive oil, pine nuts, garlic, salt & pepper. To save money on the basil, use a little frozen spinach in place of some of the basil. Or you could leave out the basil all together and have a spinach pesto. Then layer the cooked noodles with pesto, marinara, whatever you want. Sun dried tomatoes and artichoke hearts would be great, too. You could also make a skillet lasagna by breaking the noodles into pieces, adding pesto and some water and cook until pasta is done.

Oh Maryland, I could not help it when reading your recipe to think of the extraordinary flavor of fresh basil, olive oil, pine nuts, garlic, salt & pepper. Delicious!!
