Summer is my favorite season for one reason – Tomatoes. I love them. I hope to get lots of ideas and recipes for tomatoes in this post. Comments are absolutely welcome.

It is with great anticipation that I ask What Can I Make with Fresh Tomatoes?

PS. I know tomatoes are a fruit, but I’m going to stick them in the veggie category, too, for those of us that are looking for veggie dishes.

    Tomato Skin Care Recipes

    Tomatoes are of great help for your skin. If you happen to go in the sun and in that span of time you get tanned, there is an easy solution. Prepare cucumber and tomato juice mixture to be applied on the affected areas of your skin. Keep it for 10 minutes; later wash it off with clean water. You will notice the difference.

    Anyone can have skin rashes and the main reason for these rashes is silicon deficiency. This problem is overcome by having good amounts of sprouts, tomatoes and other vegetables and fruits.

    Make a mixture of honey and tomato juice to be applied on your face and neck. Wash it off after 15 minutes and within minutes you would see a glowing face in front of the mirror.

    Another recipe for glowing skin is the mixture of 2 tsp tomato juice and 4 tsp curd. Apply it well on your skin and wash it in 15 minutes to see the difference.

    This recipe is for all those people who have oily skins, open pores and blackheads. Tomato has a acidic trait which also contains potassium and vitamin C which helps in cleansing the face. Rub a sliced piece of tomato on your skin and leave it for fifteen minutes. This would help the pores. Later wash it off with water.

    For a good complexion spread the pulp of tomato on your face daily. Keep it for 1 hour and then wash it off with warm water. If done regularly the results will be seen.

    The tomato lotion helps in shrinking the enlarged pores and this can be made by using tomato juice mixed with 2 or 3 drops of lime juice. Apply this solution on your face and then wash it off for 15 minutes.

    A great recipe to remove sunburn can be made by adding 2 tsp tomato juice in 4 tbsp of buttermilk. Apply it all over your skin. Wash it off after keeping it for 1/2 hour.

    You can easily make a homemade cleanser by using tomato and milk. Use tomato juice by straining the pulp and mix it with equal parts of milk. Store this in a bottle which can be refrigerated to be used everyday. Apply this on your face and neck by using your fingertips. Keep it for 10 minutes and later wash it with cold water.

    Buy a the bucket of those bite-size marinated fresh mozzerella balls. Get grape or cherry tomatoes and fresh basil.

    Layer tomato, basil, and mozzerella balls on the skewers.

    It’s like a tomato/mozzerella salad on a stick.

    Cut off a thin slice from the top and bottom of a large tomato. Scoop out the middle of the tomato with a spoon. Make stuffing with the tomato scooped out (mix tomato with your choice of : chopped onion, garlic, parsley, lemon juice, corn kernels, cumin, coriander, red pepper flakes, scallions, jalapenos). You could mix this in a food processor to avoid all the cutting and chopping.

    Then stuff tomatoes. Bake at 350F until slightly browned… yum!!!!

    Cut tomatoes and cucumbers in bite size chunks. Add some light italian dressing and put everything in the fridge for about 2 hours.

    Take a medium to large sized tomato, scoop out the insides and mix with cottage cheese. Put the mixture back into the tomato and top with shelled sunflower seeds and cheddar cheese. Makes a great cool summer salad

    In the summer, I love a cold tomato soup with tomato, onion, garlic and greenpepper. It tastes best when the ingredients mix together for a couple of hours before serving. Season to taste.

    Cut up tomatoes into quarters. Take a piece of fresh mozzarella and cut it up into slices. Place tomatoes and mozzarella on platter, sprinkle a little olive oil on top, and you have a delicious side dish.

    Try this: Tomato and lettuce on toast. A little mayo, and this is one delicious sandwich. If you have a few bacon bits, you can add them as well.

    I know everyone goes the healthy way with tomatoes usually but i like to fry em. I dip in the same batter you use for onion rings and coat both sides with italian bread crumbs. Then toss in some hot olive oil to fry em up.

    Cut in half, or quarters and drizzle with olive oil and a little basalmic vinegar. Put on the grill. These are delicious. Works great on the george foreman also.

    Another idea; spread toasts with garlic butter. Put chopped up tomato and basil on top. Sprinkle with parmesan cheese and run under broiler for a great bruschetta.

    TOMATO SALAD
    I make a great tomato salad with chopped tomatoes or halved cherry tomatoes. Place in bowl and add red onion rings, sweet mixed pickles (these are fat sweet pickle slices bottled with pearl onions and cauliflower). Sprinkle with salt and pepper and a little sugar. Mix and set aside. Now place a small amount of Miracle Whip with an equal amount of Hellman’s mayo in a separate dish, add just a drop of seasoned rice vinegar, mix well and add to tomatoes. Let sit for 15 minutes before serving. This is delish.

    HARICOT VERTS W/ROASTED CHERRY TOMATOES
    My new favorite side dish I invented is prepared with cherry tomatoes and fresh haricot verts (french stringbeans). Wash stringbeans and parboil for just 4-5 minutes. You don’t want beans to loose their crunch. Pour into colander and rinse with cold water. Place whole cherry tomatoes drizzled with olive oil and seasoned with salt and pepper in oven set at 400. Roast until they split open. Pour 2-3 tablespoons of olive oil into a skillet and add 4-6 whole cloves of garlic (smashed a little, not chopped)and a small amount of red pepper flakes. Saute for a few minutes (PLEASE don’t burn the garlic). Add stringbeans and tomatoes and cook a few minutes to incorporate flavors. Adjust seasoning. FANTASTIC!!

    I grew up having tomato gravy – slice the fresh tomatoes a little thick, roll in flour and place in hot pan and stir until cooked and falling apart – add some milk, salt and pepper and cook until thick. Serve over toast. It was a favorite during the summer tomato season.

    Cut the tomatoes into finer pieces. Mash them using your mixer until it becomes a paste like substance. Take a fry pan and add two tea spoons of oil in it. Add 2 some mustards, Uradh Dal into the boiling oil. Add the mashed tomatoes into it. Keep on stirring the mixture frequently. add some salt to taste. After 5-10 minutes, close it (don’t switch off the flame, let it boil). After about half an hour (atleast more than 20 minutes approx), all the tomatoes would have become a semi-solid paste-like substance. Now your tomato side-dish is ready. You can mix it with rice and make tomato rice or can be used as side-dish for your breakfast or dinner.

    Those tomatoe mozzerela skewers sound great. Tomatoes are a favorite in our house, even with our toddler. Can hardly wait for summer when we can pick ‘em right off the plant.

    Make Home Made Pico – Use fresh onion, tomato, jalapeno peppers, garlic, cilantro and lime juice. Chop all ingredients and mix together. This stuff gets better the longer it stands. Great with rice, meat, eggs just about anything. Also fantastic serve with chips. Also baked tomatos are really good too. Slice tomatos thick and layer with motzarella or any other cheese you like and sprinkle with black pepper. Place under broiler until cheese melts and begins to just brown. Serve on english muffins with or without a poached egg, on toast with ham or just by themselves.
