What Can I Make with Fresh Artichokes?
I’m stumped. Fresh artichokes are a total mystery to me. I understand the marinated kind in a can, but the fresh ones? No clue. Artichokes are pokey and fuzzy and I have no idea how to turn them into something delicious.
So, creative moms, I need your artichokes tips and artichoke recipes. Tell me — What can I Make with Artichokes?!

Remove the stems and set the fresh artichokes in a pot. cover with plenty of water, add a little salt and boil them for about 45 min until the stems are soft.
You can serve them with a variety of dips, but they are great even with a little melted butter. To eat them you pull the leaves off, dip them and use your teeth to scrape out the meaty part inside without eating the tougher outer leaf.

I LOVE artichoke and spinach dip.
Mix artichokes with garlic, spinach, cream cheese, salt, pepper and olive oil. Bake in the oven until bubbly. Wonderful with tortilla or pita chips. Yum!

I do the same thing with fresh artichokes as Suzanne. The dip I make is a combination of a couple tablespoons light or nonfat mayo with a squeeze of dijon mustard. Mix that up and give each person some in a small dipping dish. It is divine!

Stuffed artichokes are a staple in my home. Here is a great recipe for 4 artichokes:
First run them through water
Spread the leaves
In a separate dish make the stuffing by adding:
1 cup Bread crumbs;
1/4 cup Grated parmesan cheese;
Salt, pepper, parsley, garlic powder, and add water
to make it soft and pliable;
Mix the ingredients;
Stuff the artichoke, pressing down the ingredients into the artichoke;
Take a pot - add the artichokes;
Fill the pot with water up to 3/4 of the artichokes;
Add a tablespoon of tomato sauce on top of each artichoke;
Bring water to boil, then lower gas to a slow boil;
Cover pot;
After an hour, pull a leaf from one of the artichokes to ensure it is soft;
Then serve.

How do I make Artichoke dip from a fresh Artichoke? All the recipes call for canned artichokes. I have already boiled it with salt, pepper and garlic salt. Now how do I make ready for the dip?

I remember the most romantic dinner I had with a boyfriend years ago (23 years in fact, so it was quite memorable). HE cooked and served it since I hadn’t a clue about artichokes then:
1. Steam the artichokes ca. 15 minutes
2. Meanwhile, combine sour cream, chives, some garlic salt, green onions finely chopped, and bacon pieces. Stir up to make the dip. Add salt/pepper to taste.
3. Light two tapered candles
4. Pour a little white wine
5. Sit opposite each other, savoring the pulled off leaves while romantic music plays in back ground.
A great ‘late evening’ event to plan with hubby after the kids are in bed!
