What Can I Make With Cucumbers

My neighbor just stopped by with a bag of cucumbers straight from his garden. Now there is absolutely nothing better than fresh, homegrown cucumbers that ripened straight on the vine. I love them just cut up with a little salt, or mixed with homegrown tomatoes and dressed with a little vinagrette as a simple summer salad.

But other than that, I’m just not sure what I can make with them and there are more of these delicious veggies sitting on my kitchen counter right now than we can eat in a week. Any thoughts? What are your favorite cucumber recipes? Leave a comment with your suggestions below.

    Greetings, I found one recipe for Cucumbers, hope you will like it.

    “Tomato Cucumber Salad with Mint”

    INGREDIENTS (Nutrition)

    * 1/3 cup red wine vinegar
    * 1 tablespoon white sugar
    * 1 teaspoon salt
    * 2 large cucumbers, peeled, seeded, and cut into 1/2-inch slices
    * 3 large tomatoes, seeded and chopped
    * 2/3 cup chopped red onion
    * 1/2 cup chopped fresh mint
    * 2 tablespoons olive oil
    * salt and pepper to taste

    DIRECTIONS

    1. In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers, and marinate 1 hour, stirring occasionally.
    2. Gently toss tomatoes, onion, mint, and olive oil with the marinated cucumbers. Season with salt and pepper.

    My husband makes my all time favorite cucumber dish. It’s extremely simple so it’s surprisingly good! Peel your cucumbers and fancy them up a bit by running a fork all down the length of them to make a little groove along the edge. Slice them up in a glass bowl. Now slice up a sweet, preferably Vidalia, onion into nice thin rings and add to the bowl. (Handy hint about sweet onions… the flatter they are, like a flying saucer, the sweeter they are.) Your mix should be about equal amounts of cucumber to onion. Pour in a good apple cider vinegar, enough to cover your cukes and onions, a little salt and a lot of fresh ground black pepper. Taste it and adjust your seasoning. Let it sit in the refrigerator for about 30 minutes. That’s it!

    My Mom used to make cucumber sandwiches for us with cucumbers straight from the garden. I remember them very fondly and still make them today. I use a good, multi-grain, crusty bakery bread, Real mayonnaise, a little salt and pepper, lay on my peeled and sliced cucumbers, and that’s my lunch. I’ll add tomato if I have it, or lettuce, but I’m partial to the simple cucumber sandwich. I think they used to eat them in the 40’s and 50’s. Seems to me they are old fashioned, aren’t they? Sort of nostalgic… does anyone else remember them?

    I don’t know the exact recipe but my boyfriend’s mom makes this delicious pasta salad. It always has fresh cucumbers and tomatoes in it. Honestly – I hardly even eat or like cucumbers — but it tastes really good in her dish!

    there are days when i just crave for a nicely made cucumber salad (pretty similar with what you make)… but try this one out… found this somewhere and have since used this recipe regularly…

    ingredients:
    3 large cucumbers, peeled, thinly sliced
    1 cup white vinegar
    3/4 cup water
    3/4 cup sugar
    1 tsp salt
    dash ground cayenne pepper
    dash dried parsley flakes
    1/8 tsp nga back pepper, freshly ground
    dash of dried basil leaf

    directions:
    in a pan, combine all the ingredients except the cucumber
    heat it until the sugar melts, stir occasionally
    let it cool
    add cucmber
    put it in a container with a cover then
    place it in the fridge

    goes best with pork (grilled or how ever you want it), or serve as a relish to any meal

    Serbian Cucumber-Pepper Salad

    Serves 6-8

    Ingredients:

    * 3 green bell peppers, seeded and chopped
    * 3 red bell peppers, seeded and chopped
    * 2 medium cucumbers, peeled, seeded, and sliced into crescents
    * 1 small onion, finely chopped
    * 1/4 c fresh parsley, chopped
    * 1/4 – 1/3 c olive oil
    * 2-3 T fresh lemon juice
    * 1/8 t sweet Hungarian paprika
    * 1 t dried basil
    * 1/2 t dried marjoram
    * 1/4 t dried oregano
    * Salt and pepper to taste
    * Romaine lettuce and hard-boiled eggs (optional)

    Place the chopped peppers in a stainless steel bowl and scald them with boiling water for about one minute. Drain the peppers well and mix in the cucumbers, onions, nad parsley.

    In a separate bowl, whisk the olive oil, lemon juice, paprika, basil, marjoram, oregano, salt, and pepper. Pour the dressing over the vegetables, mix well, and chill for several hours.

    Arrange the leaves of Romaine on a platter, mound the marinated vegetables in the center, and garnish with hard-boiled eggs.

    Most people think of cucumbers as the vegetable to dip with, but I have a recipe where you use the cucumber to dip in. Make a cucumber dip like this:

    In a blender, put about 1 cup or so of cottage cheese, 1 or 2 peeled AND SEEDED cucumbers cut into chunks, squeeze one lemon, and salt and pepper. Blend until it’s smooth. Cover and put in the refrigerator for an hour or so until it gets firm.

    I use this for a vegetable dip, a baked potato topping and, if you add a little onion to it, you can use it as a tartar sauce for fish.

    Cucumber can be made as a burger or sandwich filling along with the patty. You can also use it as a cucumber juice. Another one is using as one of the ingridients in a pasta salad.

    But my favorite among them all, to use it as a garnish or filling on a tuna or chicken sandwich on a soft taco. Another one is by mixing it with vinegar, salt, pepper, salt and a a little bit of sugar depending on your preference.

    Are they small? You could try pickles. I love the herbs for healthful living mix for refrigerator dills – no canning needed!

    Well you can make that really lovely flavoured dip that you get with curries from indian restaurants. I can’t think what it is called, comes with onion salad and contains mint, yoghurt and cucumbers, make that – its beautiful with curries, or as a dip for cut carrots etc.

    Hey u can try this recipe….

    Cucumber dip recipe with cream cheese, grated onion and chopped cucumber.
    Ingredients:

    * 1 small package (3 ounces) cream cheese
    * 2 tablespoons finely chopped onion
    * 1/2 cup finely chopped cucumber
    * half-and-half
    * salt
    * thinly sliced unpeeled cucumber

    Preparation:
    Combine cream cheese, onion, and finely chopped cucumber. Add half-and-half until mixture is dipping consistency. Add salt to taste. Garnish with cucumber slices.
    Makes about 1 cup of dip.

    To be very true, cucumbers can only be taken as a fresh salad or in raw. I think there is nothing other than that which we can do with them. Perhaps we can use lemon and some chilies with them to make them a little spicy.

    peel & slice thin, put in bowl cover with water that has a lot of salt added, soak for a FEW HOURS OR OVERNITE, DRAIN, RINCE, DRAIN, now make a mix of sugar & vinegar for a sweet sour taste, cover cuke slices & set in frig, use as a accompanymen to a meal
