What Can I Make With Cheddar Cheese?
A business associate of ours just gave us a 5 lb wheel of cheddar cheese. This thing is huge and I can barely fit it in the fridge. So far we’ve sampled a little of the cheese with some warm French bread. Very yummy and a nice sharp taste to it.
I’m already planning on making homemade mac and cheese with it a few times between now and Christmas and also told my mother-in-law that that’s what I’m bringing for Christmas dinner along with a plate of guess what? Cheese and crackers.
We also usually use a good bit of cheddar to make grilled cheese sandwiches or tortillas but other than that I’m at a loss…
Any ideas on what else I can make with lots of cheddar cheese? Has anyone tried freezing the cheese?
I’m desperate for your suggestions before the cheese goes bad.

Homemade mac and cheese is so much better than anything you can by in a box. Two things I like to mix in are crumbled bacon or ham.

Homemade mac and cheese is awesome. Another great dish is Creamed Eggs for breakfast or brunch. It is a flour type base with butter and sliced up hard boiled eggs poured over toast with shredded cheese on top! I’ve had it for years now since I got married - in-laws family receipt, but I just googled it and saw many similar ones online. Try it, you’ll like it.

Great idea on the creamed eggs. I met a friend for breakfast last week and she made creamed eggs - they were fabulous. I’ll have to get her recipe.

Two words: Welsh Rarebit. Make a cheese sauce by mixing equal amounts flour and butter and stirring over medium low heat. Instead of using milk like a regular cheese sauce, add beer little by little and bring to a simmer. Then add your shredded cheddar and stir until melted and smooth. Season with pepper and a little tabasco. Take some nice hearty white or sourdough bread, lay a slice of ripe tomato on top, pour over a generous amount of cheese sauce and broil til browned and bubbly. Yum!

I would think you could shred a bunch of it and then freeze it? (especially if you have a vacuum sealer) I buy shredded cheese in the grocery store and freeze it all the time… I would think it would work the same. You also buy frozen pizza’s with frozen cheese on them - so I would say try freezing it!

Mashed potatoes with shredded cheddar cheese are a great way to go. I sometimes also add a bit of chopped garlic to it

Here is an easy recipe for Cheeseburger Casserole:
1 pound hamburger
1 clove garlic, minced
1/4 cup chopped onion
Salt and pepper
1/4 cup catsup
1 (8 oz.) can tomato sauce
1 cup cheddar cheese, grated
1 can refrigerated biscuits
Brown hamburger, garlic, and onion in skillet until browned. Drain fat, add salt and pepper. Stir in catsup and tomato sauce; heat thoroughly. Pour hamburger mixture into a 8-inch square baking dish. Sprinkle grated cheese on top. Top with refrigerated biscuits. Bake at 425 degrees for 20 to 25 minutes, until biscuits are browned.

I realize you probably have already used your big wheel’o'cheese, but I love the cheesy hashbrown casserole with cornflakes on top. Yumm!
