What Can I Make with Cauliflower?

My mom makes this awesome Curried Cauliflower every year for the holidays and I just love it. I’ll see if I can get her to share her recipe. ;)

I, personally, love cauliflower cooked and served with cottage cheese and sunflower seeds on top. YUM.

What about you? I’m in the mood for some cauliflower. Any ideas for me?

    I love to boil it until it’s soft then run it through a blender with some cream cheese and butter - it’s like mashed potatoes only healthier - and low carb if that’s a concern. We LOVE them this way!

    I love cauliflower just about anyway you want to give it to me. Raw, steamed, with cheese.

    I’ll have to try your cottage cheese and sunflower seeds idea…sounds yummy!

    Boil or steam the cauliflower. Drain and place in an ovenproof bowl. Make a white sauce with grated chedder (cheese sauce). Pour the cheese sauce is over the cauliflower. Yummy! You can also add more grated cheese on top and grill (broil) for a few minutes until the cheese is crisp.

    How about a raw salad. Chop or break the cauliflower into small pieces, add other vegetables such as broccali, celery, fresh or frozen peas, etc. and top with a ranch style dressing. Its a good crunchy salad.

    This recipe is used at a lot of restaurants around for those counting carbs. Just boil the cauliflower (broken into florets is faster) and drain it REALLY well. Then throw in about a tablespoon or two of mayo, some Lowery’s seasoned salt, and a little white cheese (mozerella works great). Smash it with a potato masher, put into a baking dish, sprinkle with grated parmesan and pop into the oven for a few minutes. Yummy.

    I love the imitation mashed potato recipe. I went to a friends house and didn’t know it wasn’t potatoes until they told me. It was very good.
