What Can I Make With Carrots

I almost always have a bag of baby carrots in the fridge. We love to much on them as a snack or appetizer and I serve them as a side dish of sorts with lunch. Everyone in the family enjoys them dipped in a little ranch dressing, but we don’t really like cooked carrots all that much. I toss a few handfuls of them in when I make pot roast, but that’s about it.

Needless to say, I need some new ideas on what to do with carrots. Do you prefer ready to eat baby carrots or do you use the whole regular ones? What are your favorite ways to prepare them? Share your recipes as a comment below.

    Unless your vegan, beef stew or maybe you could steam them and serve with a pork roast. Just a couple ideas.

    I just used a bunch of carrots this weekend in some muffins I made…Don’t tell my daughter. I made muffing for breakfast and used cooked carrots and squash puree and added them for an extra nutritional punch. Everyone loved them!

    Carrot Salad

    2 cups shredded carrots
    1 tbsp olive oil
    1 tsp balsamic vinegar
    1 tsp dijon mustard
    1/2 tsp herbes de provence (or whatever herb mix you prefer)
    salt and pepper

    Wisk together everything except the carrots. Add carrots and serve.

    I’m not a real fan of carrots UNLESS I make Candied Carrots. There are a lot of ways to make them, but I prefer the simple method of adding some butter and brown sugar to the drained, cooked carrots. Then I boil them until the sugar and butter reduce to a thick, sugary coating on the carrots. Yum Yum!
