		<description>I made a cantaloupe salsa one time.  I know it might sound kind of odd but it&#039;s delicious over grilled fish and especially with pork.

2 Cups cantaloupe diced
4 Poblano peppers
Handful of Cilantro
Juice of 1/2 lime
zest of 1 Lime
2-3 Tablespoons of honey depending on taste

1. Roast the poblano peppers.  You can do this over an open gas flame on your stove by placing them directly on the burner and turning them with tongs as the skin blackens.  Just be very attentive and don&#039;t leave them unattended.
2. As soon as the skin of the pepper is charred all around, put them into a plastic ziplock bag and leave them for 5 mins.  This will losen the skin.  Take the peppers out of the bag and use a paper towel to remove some of the char.
3. Dice the peppers, removing the stem and seeds from inside, and then combine the diced pepper and the diced cantalope in a mixing bowl.
4. Wash and finely chop the cilantro and add it to the bowl.
5. Add the lime zest, juice, and honey to thw bowl and mix it all together.

Depending on your personal taste, you can add salt for another layer of flavor, or more honey if you&#039;d like to sweeter.</description>
