What Can I Make with Broccoli?

I’ve decided to go back on the South Beach Diet Plan. As part of that, I can eat as much broccoli as I can humanly handle. ;)

So, with that in mind, do you have any great recipes for making broccoli (even if they don’t fit into the South Beach Diet)?

    Broccoli Casserole Even George Bush Would Love

    2 pkgs frozen chopped broccoli, or 3 cups fresh chopped broccoli
    1 can cream of mushroom soup
    2 cups grated sharp cheddar
    2 beaten eggs
    1 cup mayonnaise
    1 cup chopped canned french fried onions
    1/4 cup sour cream
    1 cup cheese cracker crumbs
    1/2 cup cheese cracker crumbs
    Salt and pepper to taste

    Cook broccoli until just tender. Drain/press to
    remove all excess water. Combine remaining
    ingredients, except 1/2 cup cracker crumbs, with
    broccoli. Stir well. Pour into buttered casserole
    dish. Top with remaining crumbs. Bake uncovered in
    350 degree oven for 30-45 minutes. Serves 6-8.

    Here’s a simple and quick idea.
    You’ll need:
    1 small onion sliced
    2 cups of chopped fresh broccoli
    1 cup shredded imitation cheddar cheese
    1 tbsp. I can’t believe it’s not butter
    1/2 cup of water

    Cook the broccoli and onions in the water and butter until just tender. Do not drain excess water as there shouldn’t be much left. Add the cheese and stir until melted. Serve and enjoy!

    Here is a great snack or appetizer. Boil broccoli until tender. Cut in quarters. Place on dish and add 2-4 slices of american cheese. Put in microwave for 4-5 minutes or until cheese has melted. This is a delicious meal.

    OK this is what i like to make on a cold day. I take the broccoli and boil it in a lil water, butter, and lemon wedges til broccoli is soft then i strain it and take the wedges out and toss them. Set the broccoli aside and make some white rice. while i am making rice I use some nacho cheese (that comes in big can) put in a pot and mix in some milk and some real cheddar cheese til its smooth and creamy. Then i put the finished rice and broccoli in it. Makes a nice broccoli and rice soup. Can also add cooked chicken strips in it.

    Easy as Can Be Broccoli Cheese soup (okay probably not diet friendly, but still quite tasty!)

    Throw the following into a crockpot:

    2 bags of frozen chopped broccoli
    2 cans of cheddar cheese soup
    2 12-oz cans evap. milk (I’ve also used half and half)
    salt and pepper to taste

    let it cook all day – on low around 8 hours.

    Stir and serve – we like to top with bacon bits, but not necessary :)

    this is good and healthy!

    make some white rice, bbq a package of boneless skinless chicken breast (marinade) if you like, Steam some broccoli and make a chicken bowl, so delicious!

    Why not simply enjoy the tast of plain, steam cooked broccoli together with your meat?
    Always steam your broccoli, never cook it in water, and you’ll taste the difference. Try a steam oven or, if that’s too bulky or expensive, a simple inset for a pot such as this veggisteam or oxo steam cookers

    You’ll never cook your broccoli in water again.
