I stop each morning and buy a premade sandwich from the store. They sell a roast beef with blue cheese sandwich and it’s sooooooooo good. Who would’ve thought that blue cheese sprinkled on a roast beef sandwich would’ve been so tasty.

I love to put it in celery. I also love to crumble on salad with dried craisens, slivered almonds and serve with Ken’s French or Italian Dressing.

Here is my absolute favorite bleu cheese recipe.

2 each 4 ounce fillet of fish (I like mahi mahi)
    salt and pepper to taste
1 green onion sliced fairly thin
    1/3 cup bleu cheese

Grill the fish with salt and pepper. Move fish to a piece of tin foil and keep on the grill. Top with mixture of green onion and bleu cheese. Serve with an chilled glass of chardonnay and steemed veggies. It is absolutely to die for!

Add butter to the blue cheese, and make a spread. Great with Italian bread!

We use Blue cheese all the time at our house. Evan the kids love it on a freshly grilled burger with sliced tomato. At the holidays we mix it with cream cheese and crumbled bacon to make a cracker spread. We eat it in salads, I make a blue cheese and horseradish sauce for roast beef, its good just broiled on a good crusty bread! Personally I think blue cheese had got a bad wrap!

I mix some crumbled blue cheese into ranch salad dressing for some instant gourmet blue cheese salad dressing.

How about some blue cheese coleslaw

    Ingredients:
    8oz white cabbage
    1 stick celery
    2 red apples
    2oz raisins
    2oz toasted slivered almonds
    Dressing:
    5fl oz natural yoghurt
    2oz Roquefort cheese
    1tbsp chives
    1tbsp parsley
    Salt and pepper

    Directions:
Shred the cabbage as finely as possible and slice the celery stick. Cut the apples into thin wedges or chunks, and squeeze a little lemon juice over them to stop any browning. Mix in a bowl with the raisins and almonds.

To prepare the dressing, mash the cheese with a fork until smooth and mix with the herbs, yogurt and seasoning. Toss the salad well in the dressing and chill lightly before serving.
