What Can I Make With Bean Sprouts?
I remember sprouting beans as a kid, so I thought it would be a lot of fun for our daughter as well. I was right
To make sure we’d get some beans to sprout, I spread them out in a large baking pan (wedged between wet paper towels). As it turns out, just about every single one of them sprouted and we are now sitting on a lot of bean sprouts ready to eat. I thought about sprinkling some over a salad, but other than that, I’m at a loss.
I’d hate to throw them out. Please give me your best recipes using bean sprouts. Thanks!

Try spicy bean sprout soup
(If you want it REALLY spicy, increase the amount of cayenne.)
Kong Namul Kuk (Bean Sprout Soup)
INGREDIENTS
6 cups water or vegetable broth
4 cups soybean sprouts, washed and root ends trimmed
2 Tbsp soy sauce
1 clove garlic, minced
1 tsp sesame oil
1/2 tsp cayenne
2 tsp salt
6 green onions chopped
red pepper flakes
METHOD
In a large saucepan, bring 2 cups of the water or broth to a boil. Add the bean sprouts, reduce the heat to low and cook for 10 minutes.
Mix in the soy sauce, garlic, oil, red pepper and salt. Add the remaining 4 cups or water and simmer 10 minutes.
Add the onions and simmer 3 minutes more. (The sprouts should still have a crunchy texture.)
Ladle into soup bowls. Decorate the top of the soup with red pepper flakes and serve.

That sounds like a delicious recipe… I have been trying to open up my horizons as far as new foods are concerned..
This sounds like a good one to start with… I LOVE soup.

A simple stir-fry vegetable dish with bean sprouts that I like is:
1. Cook one 16 ounce bag of frozen french cut green beans, drain and set aside.
2. Meanwhile, cut up one big, sweet onion into good size wedges.
3. Cut up one sweet red bell pepper into thin strips.
4. In a big pan, stir-fry onion and sweet red pepper in a little canola oil until just crisp/tender. Salt and pepper to your liking.
5. Add the cooked green beans, stir together and heat through. Sprinkle a little soy sauce in pan and mix gently.
6. Then just before serving, mix in a cup or more of bean sprouts. You can use as many bean sprouts as you wish. They add a nice crunch and compliment the green beans.

The next time you make hamburger patties, consider adding bean sprouts as an “extender”. Chop up about 1 cup of bean sprouts for every 1 pound of ground beef. I also add a little onion, garlic, tomato sauce and soy sauce or Worchestershire sauce for extra flavor. It’s something to keep in mind for meatloaf or meatballs, too.

I started making my own bean sprouts in my ‘back to the earth’ days in the 70’s. My favorite were, and still are, soy bean sprouts. They are a lot bigger so not for the faint of heart–they really pack a wallop of flavor. Soy bean sprouts are very different than the alfalfa sprouts that you are used to buying in the grocery store. Give them a try and let me know what you think.
