What Can I Make with a Fresh Jalapeno?

I made a soup last night with a fresh jalapeno. It was delicious. (and I will post the recipe below)

But, it got me thinking about jalapenos. What other uses are there for these spicy little guys?

    My husband is a hot food fanatic. He slices fresh jalapenos puts them on his Burgers.

    I personally use jalapenos when cooking fresh greens (collards, kale or turnip greens). I slice them very thin and add them with the greens while they simmer. It adds a nice flavor w/o being too spicey.

    My favorite recipe for using fresh jalapenos is in a soup, as I mentioned above.

    What you need:
    Fresh jalapeno
    One medium onion
    Chicken Broth
    Can of Kidney beans (rinsed)

    Just dice the onion and jalepeno (remove seeds first if you just want flavor and no spice).
    Saute it in oil in a saucepan for about 4 minutes.
    Then, add chicken broth and the kidney beans and bring it to a boil. Cook another 5 minutes or so and it’s done.

    Options: You can, of course, add a can of diced tomatoes or sprinkle tortilla chips on top.

    We love stuffed jalapenos (stuff with cream cheese and bread them).

    And also there’s always salsa.

    Make your own fresh salsa by chopping fresh jalapenos, tomoato and onion. Toss with a little lime juice.

    All of us in our family are jalapeno lovers too so we do lots of things with them. My favorite is to take diced potatoes found in the frozen section at Wal-Mart, fried with a little onion and add chopped chicken and jalapenos, then serve them topped with cheese burrito style. Sometimes we even smother these with green chili….yummy!

    I like to make mash potatoes and dice up some jalapenos and cheddar cheese and make some garlic paste and dice a lil onion and throw it all together let the cheese melt. mmmm yummy

    Got lots-o-jalapenos from your garden and need something to to with ‘em all? Make hot-sauce! For a basic sauce, boil up 1 pound fresh jalapenos (stems cut off) in 2 cups white vinegar & 1 teaspoon salt, for about 10 minutes, covered. After the pot cools, dump the contents into a blender and puree it thoroughly. Voila, hot-sauce! Under refrigeration, it will keep for months.
