What Can I Make With Grits

Filed under: Other Stuff, Pasta & Rice — Susanne @ 2:11 pm

My husband is a southern boy, so there’s always a box of grits lurking in the pantry. I fix them on occasion with eggs or bacon and toast for breakfast. We had some this morning and for some reason it hit me that it might make a good component for lunch or dinner dishes too. I guess it is very similar to Polenta.

The first thing that comes to mind is of course shrimp and grits. I’ve had this savory low-country dish in restaurants before but have never tried to make it myself. Anyone have a good recipe for this?

Of course I’d love to hear any other recipes that include grits you’d like to share. Just enter them as a comment.

What Can I Make With Boiled Eggs?

Filed under: Main, Other Stuff — Susanne @ 11:48 am

I hope you had a great Easter. We had a good time coloring and decorating almost 2 dozen eggs. Of course now I’m left with plenty of hard boiled eggs. I’ve been storing them in the fridge, so they are still save to eat for a few more days. So far we’ve been snacking on them by peeling them and then sprinkling them with a little salt. But we are all getting a little tired of that and there are still plenty of boiled eggs left.

What are your favorite recipes and ideas for hard boiled eggs?

What Can I Make With Rapid Rise Yeast

Filed under: Main, Other Stuff — Susanne @ 12:06 pm

I started the new year off by cleaning out my spice cabinet and found two packets of rapid rise yeast. I can’t remember what I bought them for originally, but they haven’t expired yet and I’d love to use them up. I’m just no sure what to make with it. Each of the packets has 3 smaller pouches of yeast in it and they say rapid rise yeast on them.

What Can I Make With Tofu?

Filed under: Main, Other Stuff — Susanne @ 9:49 am

It is a few days after Halloween. I have raided my children’s candy bags while they are away in school as well as eaten all the candy they gave me that they are not particularly fond of. Heck, I am not even fond of some of the candy but I can’t seem to stop eating it! I just threw away a bag of Whopper Malt Balls and refuse to steal another item from their treasured stashes. I am officially in the candy detox mode and want (need) nothing but pure, healthy, and nutritious  foods in this suddenly five-pound-heavier body of mine.

I am curious about soybean products, especially tofu. A friend brought over a tofu cream cheese spread and crackers (whole-wheat!) one evening last week when I offered to buy the wine. It was the first time I have tasted tofu and it was surprisingly good. Tofu is basically created from soymilk like cheese is made from milk. It is high in protein, iron, and calcium  and low in calories with no cholesterol. Sounds pretty healthy to me! Except to buy it already prepared like my friend did,  I have no idea what to make with it and would like to open this up to anyone and everyone who has an excellent recipe or suggestion  for tofu!
